Maybe I’ve just missed it. I made a version of this soup last night, only I used sweet potato (I’m crazy for sweet potato right now even though it’s the wrong season) and added a bit of cardamom. That’s probably in the curry paste you used though. It turned out well, but my kids wouldn’t touch it!

You really do just toss everyting in the pot. But this version was too spicy for me, since I’m a wimp. Next time I’ll add half the curry paste, or use a less spicy one. I was able to find pink lentils and they have a different texture from the regular ones, and a more delicate flavor. Less earthy. I’ll make this again on our next rainy day (which looks to be Friday :(.

The place doesn’t look like much but it’s great food, and they have a seriously spicy curry soup. It makes this place a destination on a quintessential Pacific Northwest gray day. I do a bit of my own cooking, more lately now that my roommate moved to Greece, so I’ll give this a try. Do you think I could use leafy greens in this soup?
