It holds its shape. Doesn’t work well in a cold salad: it gets ‘brittle’: but a few seconds in the microwave brings back the good texture.

Freeze them and save them for a day when you’re reduced to grass soup? Maybe you could puree them and use them as another soup base, but by the time they’re boiled for broth they’ve really lost their flavor. I dunno, you tell me, since you’re at least as creative as I am in the kitchen (probably more so). If you eat them, tell me what they taste like. : )

Thanks for the suggestion about gluten-free pasta. What brands do you recommend (since I know there’s a huge variation in quality among gluten-free products).

1 – I can’t STAND to throw away veggies after making stock and straining it (especially if we are talking ROASTED veggies). So, what do you do with that “strained” stuff? I would have to eat it.

2 – Another gluten free option == USE GLUTEN FREE PASTA!
