Another good bacon substitute is parmesan crisps — I think it’s the saltiness and the crispness. However real bacon might be better for you ;-)

I’ve also had the poorly thought out soymilk gravy and your right, it doesn’t work. This looks really delicious and I like how low-fat it is. Maybe I’ll make it for dinner.

We actually broil seasoned tofu with a light oil coating and it turns out much like this, crispy and crunchy and yummy. We change seasonings with the season, going hot sometimes or Italian and herbaceous others. Tofu is so versatile and, to someone who has eaten it for years anyway, tasty! We’ll probably try this soon. And even though we eat meat in our household we do it sparingly and we do like a lot of the veggie foods, tempeh and such, so I’m going to check Veganomicon out of the library and see if it’s one we want to own.
