The unpork tamales did use a meat analog – the “chicken” strips from Morningstar. I used a bit of marjoram, poultry seasoning, and garlic to shift the flavor from “chicken” to “pork”. Shredding them and using traditional tamale filling ingredients (red chile sauce & green olives) finished the illusion.

Did you use a meat analog (as they’re so appetizingly called) or omit all together?

I’m a vegan that loves to cook and prove that vegan food tastes just as good (or better) than other food. I’ve fed people tofu chocolate cookies, black bean brownies, and beet chocolate cake. For my sweetie’s birthday last year, I made an entirely vegan version of pork-stuffed tamales that were awesome.

The most useful seems to be pear puree or banana. Pear has least flavor, and banana has some natural oils that give a good consistency to baked goods. They do have a distinct flavor of course.
